Here's a yummy treat for the kids (of all ages).
Ingredients:
1 c. ricotta cheese
2 large eggs
1/2 Tbsp. vanilla
1/2 cup all-purpose flour
1/2 Tbsp. baking powder
Pinch of salt
3/4 cup sugar
1 tsp. cinnamon
12 cups canola oil (for deep frying)
20 chocolate chips
1. Whisk the ricotta, eggs and vanilla. In a separate bowl, sift together flour, baking powder, and salt. Fold flour mixture to form a batter.
2. In a separate bowl, combine sugar and cinnamon; set aside. Meanwhile, heat oil in an 8-quart heavy-bottomed soup pot (not more than 1/3 full) over medium heat until it reaches 350 degrees on a deep-fat thermometer.
3. Divide batter in 2 batches. Take a spoonful of batter (about 2 tsp.) and place a chocolate chip in the center, and drop into the hot oil; repeat with the rest of the batch. Fry until golden brown, careful not to overfry. (about 5 min. ea.)
4. Use a slotted spoon to remove the doughnut holes and drain on a paper towel. Repeat with the second batch. Roll the holes in sugar when they are cool enough to handle but still quite warm.
