Mmmmm... Hot Chocolate

It's a hot chocolate kind of day here in the snowy North Carolina mountains. My grandmother used to make the chocolatiest hot chocolate ever and she just used Hershey's baking cocoa. I could drink her hot chocolate everyday. I dare say I could trade my morning coffee for that hot chocolate if it were as easy to make. It keeps it extra special just because I can't have it everyday. Granny's recipe is kept under lock and key but I'm going to pass along one you're sure to find equally addicting. And, there's a grown-up version.

Rich & Thick Hot Chocolate makes about 4 cups

2 tsp. cornstarch
4 cups milk, divided

2 (3.5-oz.) dark chocolate bars (at least 70% cacao), chopped
1/3 cup honey

1 tsp. vanilla extract
pinch of salt

1. Whisk the cornstarch and 1/2 cup of the milk until smooth.
2. Cook remaining 3-1/2 cups milk in a large, nonaluminum saucepan over medium heat until bubbles appear around the edge of the saucepan.
(about 4 minutes) Whisk in honey, chocolate, vanilla extract, and salt until blended and smooth. Whisk in the cornstarch mixture.

3. Bring to a light boil, whisking frequently for 4 minutes. Let cool. Mixture will thicken as it cools. Serve immediately with marshmallows or marshmallow cream.


Grown Up Version: Prepare as directed through step 2, whisking in 1/2 cup Southern Comfort with chocolate. Proceed with the rest of the recipe.

TIP > Salt is the secret ingredient. It enhances the rich, smooth taste of chocolate while toning down the naturally occurring bitterness.
